Shirley’s cooking back as soon as next week

“Clinton ferry riders who have been missing their coffee, hashbrowns and eggs in the morning will see home cooking return to the dock as early as next Monday.Shirley Wilson, owner of Shirley’s Kitchen, will be back at the dock in just a few days if all goes according to plan. The business and Wilson have been a fixture in commuters’ lives for years, serving up breakfast, lunch, snacks, and plenty of coffee.This week, construction workers at the dock finished the plumbing and electrical hookups for the business and poured a concrete pad where Wilson will park her mobile trailer kitchen.No one is more excited than Wilson, who said the she will try to get her business running as close to the Oct. 11 date as she can.“I want back so bad, I can’t tell you how much,” Wilson said last week.The pad and utility hookups are part of a concessions package the Washington State Ferries system is giving Wilson to compensate her after she was forced her to close her business last November due to dock construction. She also received a $12,835 check to make up for lost business.Kurt Grant, the ferry dock construction supervisor for MKB Constructors, said he will pour the concrete pad this week on a patch of ground between Brad Robertson’s parking lot and the dock itself. The new location for Shirley’s Kitchen is actually within feet of the old one.How soon Wilson starts cooking is now a matter of getting the actual kitchen trailer ready for business. Because she had to shut down and reopen, Wilson has to meet a number of new Health Department regulations. She has to install six new stainless steel sinks in the business, as well as a new freezer. All of this will cost money — which is the one thing she has not had much of since closing in November. Nevertheless, Wilson said she will find a way to open.“It’s looking pretty good,” she said.Shirley’s Kitchen was originally scheduled to open last April. Widening and reconfiguring sidewalks at the dock will make access to the business easier.”
